菠蘿咖喱蝦 - Curry Prawns and Pineapple
 
材料:
 
450克 中蝦 1/2 個菠蘿
1/2杯 椰汁 1湯匙 蒜茸
1湯匙 乾蔥茸 1支 香茅
1湯匙 咖喱粉 1隻 紅辣椒


調味料:
 
2湯匙 魚露 1/2茶匙 糖
1/2茶匙 鹽  


做法:
 
1. 將蝦鬚、腳剪去、洗淨抹乾
2. 將菠蘿去皮、起肉切粒;紅辣椒切碎;香茅切碎
3. 將生粉灑於蝦上,用1湯匙油略煎至八成熟盛起
4. 在1湯匙油,爆香蒜茸、乾蔥茸、紅辣椒碎、香茅碎,加入咖喱粉炒勻,再倒入椰汁煮約2分鐘,最後加入菠蘿粒、蝦及調味料,炒勻,上碟


Ingredient:
 
450 g prawns 1/2 pc of pineapple
1/2 cups of coconut milk 1 tbsp minced garlic
1 tbsp minced shallot 1 stalk of lemon grass
1 tbsp curry powder 1 pc red chili


Seasoning:
 
2 tbsp fish sauce 1/2 tsp sugar
1/2 tsp salt  


Cooking Method:
 
1. Cut off legs of prawns and rinse, drain.
2. Peel off pineapple, removes meat and diced, minced red chili and lemon grass
3. Sprinkle prawns with some cornstarch and fry in 1 tbsp oil until 80% cooked.
4. Heat 1 tbsp oil, sauté garlic, shallot, red chili, lemon grass and add in curry powder, stir, pour in coconut milk and let it cook for 2 minutes, add in pineapple meat, prawns and seasonings, stir-fry and serve.


Mga Sangkap:
 
450 gram na hipon 1/2 pirasong pinya
1/2 baso na katas ng niyog 1 kutsarang tinadtad na sibuyas
1 kutsarang tinadtad na murang sibuyas 1 pirasong lemon grass
1 kutsarang pulbo na curry 1 pirasong pulang sili


Panimpla:
 
2 kutsarang patis 1/2 kutsaritang asukal
1/2 kutsaritang asin  


Paraan ng pagluluto:
 
1. Hugasan at alisin ang mga paa ng hipon at patuyuin
2. Balatan ang pinya, at alisin ang mga laman at ihiwa ng maliliit; tadtarin ang pulang sili at lemon grass
3. Budburan ng kaunting arinang mais ang hipon at iprito sandali ng maging 80% na luto sa 1 kutsarang mantika
4. Igisa ang mga sibuyas, tinadtad na pulang sili at lemon grass sa 1 kutsarang mantika, ihalo ang pulbo ng curry, ihalo maigi, ihalo ang katas ng niyog at iluto ng 2 minuto, sa panghuli, ihalo ang pinya, hipon at panimpla, ihalo maigi at ihain.


Bahan:
 
450 gr Udang 1/2 buah Nanas
1/2 cangkir Santan 1 sdm bawang cincang
1 sdm shallot cincang 1 buah lemon grass
1 sdm kari bedak 1 buah cabe merah


Bumbu-Bumbu:
 
2 sdm saus ikan 1/2 sdt gula
1/2 sdt garam  


Cara Memasak:
 
1. Hilangkan tahap udang, cuci dan tiriskan
2. Kelupas nanas, hilangkan nanas daging dan potong kotak; cincang cabe merah dan lemon grass.
3. Panaskan 1 sdm minyak, udang tetesan dengan beberapa tepung jagung dan masak hingga 80% masak.
4. Panaskan 1 sdm minyak, masak bawang, shallot, cabe merah dan lemon grass, campuran kari bedak, bergerak, campuran Santan dan masakkan selama 2 menit, masukkan daging nanas, udang dan bumbu-bumbu, aduk rata, disajikan
