香脆排骨 - Deep-Fried Spare Ribs
 
材料:
 
300 克 肉排 20 克 蒜粒
20 克 薑粒 20 克 蔥粒


調味料:
 
1/3 茶匙 糖 1/2 湯匙 老抽
1/2 湯匙 鎮江醋  


醃料:
 
1/4 茶匙 鹽 1/3 茶匙 糖
1 茶匙 老抽 1 隻 雞蛋(打勻)


做法:
 
1. 將肉排洗淨切條狀,加醃料醃勻
2. 用少許油爆香蒜粒,薑粒及蔥粒,加入調味料煮成汁料,用碗盛起
3. 將肉排沾上生粉用油炸至脆,放上碟,汁料倒上面,即可供食


Ingredient:
 
300g Spare ribs 20g diced garlic
20g diced ginger 20g diced spring onion


Seasoning:
 
1/3 tsp sugar 1/2 tbsp dark soy sauce
1/2 tbsp brown vinegar  


Marinade:
 
1/4 tsp salt 1/3 tsp sugar
1 tsp dark soy sauce 1 pc Egg (beaten)


Cooking Method:
 
1. Rinse & cut spare ribs into strips, mix with marinade
2. Heat some oil to saute garlic, ginger & spring onion, mix in seasonings,cooked until it turns into sauce and put on a bowl.
3. Pat spare ribs with some corn flour and deep fry until cooked, remove and put on plate, pour the sauce on top to serve.


Mga Sangkap:
 
300 gramong tadyang 20 gramong tinadtad na bawang
20 gramong tinadtad na luya 20 gramong tinadtad na dahong sibuyas


Panimpla:
 
1/3 kutsaritang asukal 1/2 kutsarang maitim na toyo
1/2 kutsarang maitim na suka  


Pambabad:
 
1/4 kutsaritang asin 1/3 kutsaritang asukal
1 kutsaritang maitim na toyo 1 pirasong binati na itlog


Paraan ng pagluluto:
 
1. Hugasan ang tadyang at ihiwa ng pahaba, ihalo ang pambabad
2. Igisa ang bawang, luya at dahong sibuyas sa kaunting mantika, ihalo ang mga panimpla at iluto hanggang ma-sarsa,ilagay ito sa mangkok
3. Pahiran ng kaunting gawgaw ang tadyang at iprito lubong hanggang maluto, ilagay sa plato at ibuhos ang sarsa sa ibabaw.


Bahan:
 
300 gr daging babi (tulang) 20 gr bawang, cincang
20 gr jahe, cincang 20 gr bawang daun, cincang


Bumbu-Bumbu:
 
1/3 sdt gula 1/2 sdm kecap asin hitam
1/2 sdm cuka hitam  


Bumbu:
 
1/4 sdt garam 1/3 sdt gula
1 sdt kecap asin hitam 1 buah kocok telur


Cara Memasak:
 
1. Mencuci daging babi tulang potong-potong panjang, campuran merinet
2. Panaskan sedikit minyak, goreng bawang, jahe dan bawang daun, campuran semua bumbu-bumbu dan goreng hingga mendidih, menaruh mangkuk
3. Tepuk tulang dengan sedikit Tepung dan Mengorreng dalam hingga masak, menaruh di atas piring dan mengalir saus di atas dan disajikan
