蝦醬炸肉排 - Deep-fried Spare Ribs w/Shrimp Paste
 
材料:
 
12 兩 肉排 2 湯匙 雞蛋白
適量 生粉  


醃料:
 
1/4 茶匙 糖 3/4 湯匙 蝦醬
1 茶匙 生抽 2 茶匙 乾蔥
2 茶匙 酒 少許 麻油
少許 胡椒粉  


做法:
 
1. 將肉排洗淨,吸乾水份,然後斬成小件
2. 將醃料加入肉排內拌勻,醃約廿分鐘
3. 將生粉與雞蛋白混合成粉漿,放入肉排蘸上粉漿。
4. 燒熱油,將肉排炸至金黃香脆,抹去油份,即成。


Ingredient:
 
12 taels spare ribs 2 tbsp egg white
Some Flour  


Marinade:
 
1/4 tsp sugar 3/4 tbsp shrimp paste
1 tsp light soy sauce 2 tsp chopped shallot
2 tsp Wine A dash of seasame oil
A pinch of pepper  


Cooking Method:
 
1. Wash spare ribs, wipe dry and cut into small pieces.
2. Marinate spare ribs for 20 mins.
3. Mix the egg white and flour & coat with spare ribs.
4. Heat oil, deep fry spare ribs until golden brown, drain excess oil & serve.


Mga Sangkap:
 
12 taels na Tadyang 2 kutsarang puti ng itlog
Kaunting Gawgaw  


Pambabad:
 
1/4 kutsaritang asukal 3/4 kutsarang bagoong
1 kutsaritang toyo 1 kutsaritang shallot
2 kutsaritang alak kaunting sesame oil
kaunting paminta  


Paraan ng pagluluto:
 
1. Hugasan ang tadyang, punasan ang tubig at ihiwa ng maliliit na piraso
2. Ibabad sa pambabad ng 20 minuto
3. Ihalo ang puti ng itlog at gawgaw, ilagay ang tadyang
4. Mag-init ng mantika, at iprito lubong ang tadyang hanggang malutong at madilaw, punasan ang natirang mantika at ihain.


Bahan:
 
12 taels iga babi 2 sdm putih telur
Sedikit tepung  


Bumbu:
 
1/4 sdt gula 3/4 sdm Adonan Udang
1 sdt kecap asin 1 sdt cincang Shallot
1 sdt arak Sedikit Minyak Wijen
Sedikit Lada  


Cara Memasak:
 
1. Mencuci Iga Babi, mengalirkan dan potong potong
2. Campuran Bumbu merinet selama 20 menit
3. Campuran putih telur dengan tepung, turunkan Iga Babi ke dalam campuran
4. Panaskan minyak, mengorreng dalam Iga Babi hingga garing dan keemasan coklat, seka minyak kelebihan dan disajikan
