豆豉油雞 - Fermented Soy Bean Chicken
 
材料:
 
1/2隻 雞 1/2隻 紅椒
6粒 乾蔥頭 1湯匙 蒜茸
11/2湯匙 豆豉 4片 薑


調味料:
 
1/4茶匙 鹽 1茶匙 糖
2茶匙 老抽王 2茶匙 蠔油
2湯匙 水 少許 麻油
少許 胡椒粉 適量 粟粉水


醃料:
 
1/2茶匙 鹽 1/2茶匙 糖
1茶匙 生抽王 1茶匙 紹酒
1茶匙 粟粉 少許 胡椒粉


做法:
 
1. 將雞切件及加醃料拌勻;紅椒切件;蔥頭去衣略拍。
2. 燒1湯匙油,將雞件略煎至金黃色,盛起。
3. 燒1湯匙油,將蔥頭、薑片爆香,繼而加入紅椒、蒜茸、豆豉炒勻。
4. 加入雞件炒透,後加調味料煮片刻,最後加少許粟粉水推至汁液收乾便可上碟。


Ingredient:
 
1/2 pcs of Chicken 1/2 pcs of red chili
6 pcs of shallots 1 tbsp minced garlic
1 1/2 tbsp fermented soy bean 4 slices of ginger


Seasoning:
 
1/4 tsp Salt 1 tsp Sugar
2 tsp Soy Sauce 2 tsp Oyster Sauce
2 tbsp water Some Sesame Oil
Some Pepper Some Cornstarch with Water


Marinade:
 
1/2 tsp Salt 1/2 tsp Sugar
1 tsp Soy Sauce 1 tsp Wine
1 tsp Cornstarch Some pepper


Cooking Method:
 
1. Cut Chicken into pieces and mix with marinade; cut chili; Remove skin of shallot and pat.
2. Heat 1 tbsp oil, stir-fry chicken until turns golden brown, drain.
3. Heat 1 tbsp oil to sauté all other ingredients, mix well.
4. Mix in chicken, stir well, add in seasonings, add in some cornstarch water and cook until sauce dries up. Serve.


Mga Sangkap:
 
1/2 piraso manok 1/2 pulang sili
6 na maliit na sibuyas 1 Kutsarang dinurog na bawang
1 1/2 kutsarang burong na beans 4 hiwa ng Luya


Panimpla:
 
1/4 kutsaritang asin 1 kutsaritang asukal
2 kutsaritang toyo 2 kutsaritang saus ng talaba
2 kutsarang tubig Kaunting Mantika ng Linga
Kaunting Paminta Kaunting Arinang Mais at tubig


Pambabad:
 
1/2 kutsaritang asin 1/2 kutsaritang asukal
1 kutsaritang toyo 1 kutsaritang alak
1 kutsaritang arinang mais Kaunting Paminta


Paraan ng pagluluto:
 
1. Ihiwa ang manok at ihalo ang pambabad; ihiwa ang sili; alisin ang balat ng sibuyas at ipalo.
2. Iluto ang manok sa 1 kutsarang mantika hanggang maging kayumanggi at itabi.
3. Igisa ang ibang mga sangkap sa 1 kutsarang mantika, ihalo mabuti.
4. Ihalo ang manok at panimpla, ihalo ang arinang mais na tubig para maging malapot ang sarsa, iluto hanggang maging tuyo ang sarsa. Ihain.


Bahan:
 
1/2 buah ayam 1/2 buah cabe merah
6 siung bawang putih 1 sdm cincang bawang
1 1/2 sdm kedalai hitan (tau si) 4 iris tipis jahe


Bumbu-Bumbu:
 
1/4 sdt garam 1 sdt gula
2 sdt kecap asin 2 sdt saus tiram
2 sdm air Sedikit Minyak wijen
Sedikit lada Sedikit tepung jagung dengan air


Bumbu:
 
1/2 sdt garam 1/2/ sdt gula
1 sdt kecap asin 1 sdt arak
1 sdt tepung jagung Sedikit lada


Cara Memasak:
 
1. Potong lebar ayam dan campur bumbu merinet; potong cabe merah, Sinkirkan bawang putih dan menepuk.
2. Panaskan 1 sdm minyak, masak ayam hingga kecoklatan, mengalirkan.
3. Panaskan 1 sdm minyak, masukkan bahan-bahan, ada rata.
4. Masukkan ayam, ada rata, campur bumbu-bumbu, masak hingga saus kering. Disajikan
