辣子雞丁 - Fried Spicy Chicken
 
材料:
 
2隻雞髀肉 2湯匙菜脯
1/2茶匙花椒粒 1隻指天椒
1湯匙蒜茸 2 湯匙油


調味料:
 
2湯匙紹酒 1湯匙砂糖
2湯匙生抽 1湯匙白醋
1湯匙生粉 1湯匙清水


醃料:
 
2茶匙生抽 少許鹽
少許栗粉  


做法:
 
1. 將雞髀肉起肉;菜脯、指天椒切粒;將雞髀肉切粒,加入醃料15分鐘;菜脯以浸過面的清水,加少許砂糖拌勻,浸30分鐘,撈起,吸乾水份待用。
2. 燒熱油,炒香花椒粒後,撈起花椒粒棄掉,加入辣椒粒及蒜茸爆香,再放入雞丁炒至表面轉為白色。
3. 繼續加入已拌勻的調味料炒勻,蓋上蓋煮3分鐘,便可上碟


Ingredient:
 
2pcs chicken leg 2 tbsp pickles
1/2 tsp peppercorns 1 pc red perennial chilli
1 tbsp chopped garlic 2 tbsp oil


Seasoning:
 
2 tbsp Shaoxing wine 1 tbsp sugar
2 tbsp soy sauce 1 tbsp white vinegar
1 tbsp corn starch 1 tbsp water


Marinade:
 
2 tsp soy sauce some salt
some corn starch  


Cooking Method:
 
1. Remove Chicken leg meat, diced perennial chili and pickles; chop chicken leg meat and marinade for 15 minutes, soak pickles in water, marinade with sugar for 30 minutes. Drain and absorb water.
2. Heat oil to fry peppercorns, remove them and fry perennial chili and garlic, add in chicken and fry until chicken meat turns white.
3. Pour in seasonings, mix and cover to cook for another 3 minutes, ready to serve.


Mga Sangkap:
 
2 piraso hita ng manok 2 kutsarang pickles
1/2 kutsarita Peppercorns 1 piraso perennial sili
1 kutsara dinuorg na bawang 2 kutsarang mantika


Panimpla:
 
2 kutsara shaoxing alak 1 kutsara asukal
2 kutsara toyo 1 kutsara putting suka
1 kutsara arinang mais 1 kutsara tubig


Pambabad:
 
2 kutsarita toyo kaunting asin
kaunting arinang mais  


Paraan ng pagluluto:
 
1. Alisin ang laman ng hita nag manok, itadtad ang perennial chili at pickles, ihiwa ang karne ng manok ng maliliit na piraso, ihalo sa pambabad ng 15 minuto, ibabad ang pickles sa tubig at ihalo ng asukal at itabi ng 30 minuto, Patitikin at patuyuin
2. Mag-init ng mantika at iprito ang peppercorns, hanguin. Igisa ang sili at bawang, isunod ilagay ang manok at iprito hanggang maging puti ang karne ng manok
3. Ibuhos ang mga panimpla, takpan at singawan at iluto ng 3 minuto. Ihain


Bahan:
 
2 lembar paha ayam 2 sdm asinan (choi po)
1/2 sdt lada merah (peppercorn) 1 biji cabe merah
1 sdm pasta bawang putih 2 sdm minyak


Bumbu-Bumbu:
 
2 sdm arak Shaoxing 1 sdm gula
2 sdm kecap asin 1sdm cuka putih
1 sdm tepung sagu 1 sdm air


Bumbu:
 
2 sdt kecap asin sedikit garam
sedikit tepung sagu  


Cara Memasak:
 
1. Paha Ayam angkat dagingnya, potong cincang choi po dan cabe merah; cincang daging ayam dan campur merinet bumbu dan biarkan meresap selama 15 menit. Berendam asinan dengan sedikit air, bumbui dengan gula selama 15 menit. Tiriskan dan peras airnya.
2. Panaskan sedikit minyak untuk mengoreng peppercorn, angkat merah. Masukkan cabe dan bawang putih, masukkan daging ayam dan goreng hingga daging ayam berubah putih.
3. Tuang bumbu-bumbu yang telah dicapur, tutup wajan dan masak selama 3 menit. Disajikan
