香茅爆蝦仁 - Fried Water Shrimp with Lemon Grass
 
材料:
 
160克 蝦仁 120克 青椒粒
40克 洋蔥粒 1條 香茅段
1茶匙 蒜茸  


調味料:
 
1湯匙 豆瓣醬 2湯匙 茄汁
1茶匙 峇拉煎醬 1茶匙 雞粉
1/3茶匙 鹽 1/3茶匙 糖


醃料:
 
1隻 蛋白 1茶匙 雞粉
1茶匙 鹽 1茶匙 糖


做法:
 
1. 將蝦仁用醃料略醃,煮滾水將蝦仁飛水至六成熟,備用。
2. 用少許熱油爆香蒜茸、洋蔥粒、香茅段及調味料,再放下青椒角,然後放下蝦仁快手爆透上碟便成。


Ingredient:
 
160 g shrimp 40 g green bellpepper
40 g chopped onion 1 pc lemon grass
1 tsp garlic  


Seasoning:
 
1 tbsp bean paste 2 tbsp ketchup
1 tsp Belacan sauce 1 tsp chicken powder
1/3 tsp salt 1/3 tsp sugar


Marinade:
 
1 pc egg white 1 tsp Chicken Powder
1 tsp Salt 1 tsp Sugar


Cooking Method:
 
1. Marinate the shrimp with marinade ingredients. Poach the shrimp until 40 % done. Set aside.
2. Sautee garlic, onion, lemon grass and seasonings,. Then, add in the bell peppers and put back the shrimp and fry until done.


Mga Sangkap:
 
160 gramo hipon 40 gramo berdeng kampanang sili
40 gramo tinadtad na sibuyas 1 pirasong tanglad
1 kutsaritang bawang  


Panimpla:
 
1 kutsarang pasting lentehas 2 kutsarang ketsap
1 kutsaritang belacan sauce 1 kutsaritang pulbos na manok
1/3 kutsaritang asin 1/3 kutsaritang asukal


Pambabad:
 
1 pirasong puti ng itlog 1 kutsaritang pulbos ng Manok
1 kutsaritang asin 1 kutsaritang asukal


Paraan ng pagluluto:
 
1. Ibabad ang hipon sa pambabd ng sandali. Pakuluan ang hipon hanggang 40 % na luto. Itabi.
2. Igisa ang bawang, sibuyas, tanglad at mga panimpla. Tapos, idagdag ang sili at ibalik ang hipon at iprito hanggang sa maluto.


Bahan:
 
160 gr udang 40 gr paprika hijau
40 gr bawang bombai cincang 1 batang serai
1 sdt bawang putih  


Bumbu-Bumbu:
 
1 sdt bean paste 2 sdm saus tomat
1 sdt saus belacan 1 swdt chicken powder
1/3 sdt garam 1/3 sdt gula


Bumbu:
 
1 butir putih telur 1 sdt Chicken Powder
1 sdt Garam 1 sdt Gula


Cara Memasak:
 
1. Bumbui udang dengan merinet. Rebus udang hingga matang 40 %. Sisihken.
2. Tumis bawang,bombai, serai dengan bumbu-bumbu. Kemudian masukkan paprika dan masukkan kembali udang dan goring hingga matang.
