南瓜蒸腩排 - Steamed Spareribs and Pumpkin
 
材料:
 
400 克腩排 240 克南瓜
5 湯匙炒米  


調味料:
 
1/2 茶匙川椒碎 3 湯匙炒米(磨碎)


醃料:
 
1 茶匙糖 1 茶匙麻油
1 湯匙生抽 1 湯匙老抽
1 湯匙紹酒 1 茶匙川椒碎
1 茶匙甜麵醬 1 茶匙豆瓣醬


做法:
 
1. 將腩排斬小段,沖洗淨後抹乾,拌入醃料待一小時
2. 將南瓜去皮,清洗乾淨,切成厚件,加入調味料拌勻,排放在蒸籠內
3. 將腩排與粉米碎拌勻,然後鋪在南瓜件上
4. 將小蒸籠放鑊內,蒸約個半小時,至肉質鬆化,即成


Ingredient:
 
400g Spareribs 240g Pumpkin
5 tbsp fried rice (ground)  


Seasoning:
 
1/2 tsp Sichuan peppercorn (crushed) 3 tbsp fried rice (ground)


Marinade:
 
1 tsp sugar 1 tsp seasame oil
1 tbsp light soy sauce 1 tbsp dark soy sauce
1 tbsp Shaoxing wine 1 tsp Sichuan peppercorn (crushed)
1 tbsp sweet bean paste 1 tbsp hot bean paste


Cooking Method:
 
1. Chop spareribs into small pieces, rinse & wipe dry, mix with marinade & leave to marinate for 1 hour.
2. Peel & rinse pumpkin, cut into thick pieces, mix with seasonings, arrange into steamed baskets.
3. Mix marinated spareribs with 5 tbsp ground rice and arrange on top of the pumpkin.
4. Place the steaming baskets in a wok, cover & steam for 1/2 hours until meat is tender, serve.


Mga Sangkap:
 
400 gramong Tadyang 240 gramong Kalabasa
5 Kutsarang pinirtong kanin  


Panimpla:
 
1/2 kutsaritang sichuan peppercorn (tinadtad) 3 kutsarang piniritong kanin


Pambabad:
 
1 kutsaritang asukal 1 kutsaritang sesame oil
1 kutsarang toyo 1 kutsarang maitim na toyo
1 kutsarang shaoxing alak 1 kutsaritang sichuan peppercorn (tinadtad)
1 kutsarang matamis na bean paste 1 kutsarang maanghang na bean paste


Paraan ng pagluluto:
 
1. Ihiwa ng maliit na piraso ang tadyang, hugasan, patiktikin, ihalo sa pambabad at iwanan ng 1 oras.
2. Balatan at hugasan ang kalabasa, ihiwa ng pira-piraso, ihalo ang panimpla at ilagay sa pinasingaw na basket
3. Ihalo ang tadyang at piniritong kanin at ilagay sa ibabaw ng kalabasa
4. Pasingawan ito ng 1/2 oras, hanggang malambot ang karne at ihain.


Bahan:
 
400 gr Iga Babi 240 gr Labu
5 sdm menggoreng nasi (melarang terbang)  


Bumbu-Bumbu:
 
1/2 sdt Sichuan biji merica (cincang) 3 sdm menggoreng nasi


Bumbu:
 
1 sdt gula 1 sdt minyak wijen
1 sdm kecap asin 1 sdm kecap asin hitam
1 sdm shaoxing arak 1 sdt Sichuan biji merica (cincang)
1 sdm Adonan buncis manis 1 sdm Adonan buncis berbumbu


Cara Memasak:
 
1. Mencuci iga babi, tiriskan dan potong kotak, campuran bumbu merinet selama 1 jam
2. Mengelupas labu dan selang potong-potong tebal, campuran bumbu-bumbu dan tambah keranjang berkukus
3. Campuran Iga babi dan menggoreng nasi dan menaruh di atas labu
4. Uap selama 1/2 jam hingga daging babi lembut. Disajikan
