南瓜栗子炆鴨 - Stewed Roasted Duck w/Pumpkin & Chestnut
 
材料:
 
80 克栗子 200 克南瓜
160 克燒鴨 2 片薑
1 粒荵頭( 1 粒蒜頭


調味料:
 
1 茶匙糖 1 茶匙酒
1 湯匙蠔油 1 茶匙生粉
1/2 湯匙醬油 少許 水
少許 麻油 少許 胡椒粉各


做法:
 
1. 將燒鴨切件;荵頭切片;蒜頭切片;栗子去衣烚熟;南瓜去皮切塊爆油備用
2. 燒熱油下荵頭及蒜頭爆香,加入南瓜及栗子,下調味料略炆10分鐘
3. 加入燒鴨同炆約十五分鐘,即可供食


Ingredient:
 
80g Chestnut 200g Pumpkin
160g Roasted duck 2 slices ginger
1 pc Shallot 1 clove garlic


Seasoning:
 
1 tsp sugar 1 tsp wine
1 tbsp oyster sauce 1 tsp starch
1/2 tbsp soy sauce Some Water
Some Sesame Oil Some Pepper


Cooking Method:
 
1. Slice Roasted duck into pieces, slice shallot and garlic.
2. Remove outer skin from chestnuts. Boil for a while.Peel.
3. Peel pumpkin and cut into serving pieces. Scald in warm oil for later use.
4. Heat oil. Saute shallot & garlic until fragrant. Add pumpkin and chestnut. Stir-fry for a while. Add seasoning & stew for several minutes.
5. Put in roasted duck & stew for another 15 mins. Take out and Serve.


Mga Sangkap:
 
80 gramong Chestnuts 200 gramong kalabasa
160 gramong inihaw na pato 2 hiwa na luya
1 pirasong bawang tagalog 1 pirasong bawang


Panimpla:
 
1 kutsaritang asukal 1 kutsaritang alak
1 kutsarang sarsa ng talaba 1 kutsaritang arina
1/2 kutsarang toyo Kaunting Tubig
Kaunting Sesame Oil Kaunting Paminta


Paraan ng pagluluto:
 
1. Ihiwa ang Pato ng pira-piraso, ihiwa ng bawang tagalog at bawang
2. Alisin ang balat ng Chestnut, pakuluin ng sandali at balatan.
3. Balatan ang kalabasa at ihiwa ng maliliit na piraso. Iluto sandali sa
4. mainit na mantika.
5. Igisa ang bawang tagalog at bawang hanggang ma-amoy, Ihalo ang kalabasa at chestnut. Ilagay ang mga panimpla at iluto ng ilang minuto.
6. Ilagay ang inihaw na pato, takpan at iluto ng 15 minuto. Ihain.


Bahan:
 
80 gr Chestnut 200 gr Labu
160 gr Memanggang Bebek 2 Iris Tipis Jahe
1 buah shallot 1 buah bawang putih


Bumbu-Bumbu:
 
1 sdt Gula 1 sdt Arak
1 sdm Saus Tiram 1 sdt Tepung
1/2 sdm kecap Asin Sedikit Air
Sedikit Minyak Wijen Sedikit Lada


Cara Memasak:
 
1. Potong Potong Memanggang bebek dan shallot dan bawang putih dan iris tipis.
2. Chestnut, kupas lepas dari kulit, panaskan dengan sedikit air
3. Kupas Labu dan potong-potong kotak, menggoreng dengan sedikit minyak.
4. Panaskan sedikit minyak, masukkan shallot dan bawang putih, campuran labu dan chestnut dengan bumu-bumbu, menggoreng selama sedikit menit.
5. Campuran memanggang bebek, perlindungan dan goreng selama 15 menit. Disajikan.
