釀雞翼 - Stuffed Boneless Chicken Wing
 
材料:
 
8 隻雞中翼 20 克金華火腿
20 克冬筍 8 棵芥菜膽


調味料:
 
1 1/2 杯 上湯 少許 鹽
少許 糖 少許 雞粉
少許 生粉水  


做法:
 
1. 將雞翼洗淨,用上湯煮約15分鐘,放入冰水中降溫,利用上湯灼熟芥菜膽備用
2. 將雞中翼起骨,將冬筍、火腿同切條,釀入雞中翼內,再用上湯及調味料浸煮雞翼約10分鐘,盛起
3. 將芥菜膽放在碟上,將釀雞翼放上面
4. 將餘汁上湯加少訏生粉水埋芡,淋上雞翼面,即成


Ingredient:
 
8 pcs chicken wings 20g Jinhua ham
20g bamboo shoots 8 pcs bamboo mustard cabbage


Seasoning:
 
1 1/2 cup stock Some salt
Some sugar Some Chicken Powder
Some cornstarch water  


Cooking Method:
 
1. Rinse Chicken Wings, poach in stock for 15 minutes. Remove and put on iced water to cool down. Poach Bamboo Mustard Cabbage in Stock.
2. Remove the bones from the chicken wing. Cut bamboo shoot and Jinhua Ham into strips. Then, stuff bamboo shoot and Jinhua ham into the chicken wing. Then, poach in stock and seasonings for 10 minutes.
3. Put the bamboo mustard cabbage and the chicken wings on top of the plate.
4. Cook the stock with cornstarch water. Pour onto the wings. Ready to serve.


Mga Sangkap:
 
8 pirasong Pak pak ng Manok 20 gramong Jinhua Hamon
20 gramong Bamboo Shoots 8 pirasong Bamboo Mustard Cabbage


Panimpla:
 
1 1/2 tasang Sabaw Kaunting Asin
Kaunting Asukal Kaunting Pulbo ng Manok
Kaunting Arinang Mais at Tubig  


Paraan ng pagluluto:
 
1. Hugasan ang pak pak ng manok, iluto sa sabaw ng 15 minuto, alisin sa sabaw at palamigin sa malamig na tubig. Iluto ang Bamboo Mustard Cabbage sa sabaw.
2. Alisin ang buto ng pak pak ng manok, ihiwa ng bamboo shoot at Jinhua hamon ng pahaba. Ilagay ang bamboo shoot at hamon sa loob ng manok. at iluto sa sabaw at panimpla ng 10 minuto.
3. Ilagay ang cabbage at manok sa plato.
4. Pakuluin sandali ang sabaw at kaunting arinang mais at tubig, sa huli, ibuhos sa ibabaw ng manok at ihain.


Bahan:
 
8 buah Sayap Ayam 20 gr Jinhua Ham
20 gr bamboo shoots 8 buah Bamboo Mustard Cabbage


Bumbu-Bumbu:
 
1 1/2 cangkir kaldu Garam, sedikit
Gula, sedikit Ayam Bedak, sedikit
Tepung Jagung Air, sedikit  


Cara Memasak:
 
1. Mencuci sayap ayam, mendidih dengan kaldu sedikit 15 menit. menghilangkan dan disejukkan dengan air dingin. mendidih Bamboo Mustard Cabbage dengan kaldu.
2. Menghilangkan sayap ayam tulang, potong iris-tipis bamboo shoot dan Jinhua Ham, tempat mereka di dalam sayap ayam. Masukkan kaldu dan bumbu-bumbu dan masak sayap ayam selama 10 menit.
3. Menaruh bamboo mustard cabbage dan sayap ayam di atas piring.
4. Masukkan kaldu dengan sedikit tepung jagung air dan mengalir di atas sayap ayam. Disajikan
