越式蒸粉卷 - Vietnamese Steamed Roll
 
材料:
 
3 安士免治豬肉 4 安士沙葛
2 安士甘筍 2 湯匙木耳
1 茶匙芫荽 2 張濕越南春卷皮


調味料:
 
1 湯匙水 1/2 茶匙糖
1 湯匙蠔油 1 茶匙魚露
1/2 茶匙粟粉  


醃料:
 
汁 料 : 1 湯匙麻油
1 湯匙魚露 2 湯匙蔥粒


做法:
 
1. 將沙葛、甘荀切碎;木耳浸軟;芫荽剁碎;越南春卷皮切成 15cm x 15cm。
2. 用一湯匙油炒熟豬肉,加入沙葛、甘筍及木耳,炒 2分鐘,加入調味料及莞荽碎,炒勻至熟透後待涼。
3. 將餡料用粉皮包成四方形,排放碟上,蒸 4 分鐘。
4. 用麻油爆香蔥粒,拌入魚露,淋在粉皮上。可與魚露伴食。


Ingredient:
 
3 oz minced pork 4 oz yam bean
2 oz carrots 2 tbsp fungus
1 tsp parsley 2 sheets of vietnamese rice paper


Seasoning:
 
1 tbsp water 1/2 tsp sugar
1 tbsp oyster sauce 1 tsp fish sauce
1/2 tsp cornstarch  


Marinade:
 
Sauce Ingredients 1 tbsp sesame oil
1 tbsp fish sauce 2 tbsp spring onions


Cooking Method:
 
1. Minced Yam Bean and carrots; soak fungus until soft; minced parsley; cut rice paper into 15cm X 15cm.
2. Cook minced pork with 1 tbsp oil, add in yam bean, carrots and fungus, stir-fry for 2 minutes, add in seasonings and parsley, stir-fry until cook and let it cool.
3. Wrap stuffing with rice paper into square, put on steam plate and steam for 4 minutes.
4. Use sesame oil to sautee spring onions and add in fish sauce, pour on top of steamed rolls. Can be served with fish sauce.


Mga Sangkap:
 
3 onsa giniling na baboy 4 onsa na yam bean
2 onsa na karot 2 kutsarang fungus
1 kutsaritang parsley 2 pirasong vietnamese na rice paper


Panimpla:
 
1 kutsarang tubig 1/2 kutsaritang asukal
1 kutsarang sarsa ng talaba 1 kutsaritang patis
1/2 kutsaritang arinang mais  


Pambabad:
 
Sangkap ng Sarsa 1 kutsarang sesame oil
1 kutsarang patis 2 kutsarang dahon ng bawang


Paraan ng pagluluto:
 
1. Tadtarin ang yam bean at karot; ibabad ang fungus hanggang lumambot; tadtarin ang parsley, ihiwa ang rice paper ng 15cm X 15cm na kalaki
2. Igisa ang giniling na baboy sa 1 kutsarang mantika, ihalo ang yam bean, karots at fungus, iluto ng 2 minuto, ihalo ang mga panimpla at parsley, ihalo at iluto hanggang maluto ang mga sangkap at palamigin
3. Ibalot ang nilutong sangkap sa rice paper na parisukat, ilagay ito sa pinangsigawan na plato at singawin ng 4 minuto.
4. Igisa ang dahon ng bawang sa sesame oil at ihalo ang patis, ibuhos ito sa ibabaw ng pinangsingawan na rolyo. Ihain ito kasama ng patis.


Bahan:
 
3 ons cincang daging babi 4 ons yam bean
2 ons wortel 2 sdm fungus
1 sdt peterseli 2 buah vietnam kertas padi


Bumbu-Bumbu:
 
1 sdm air 1/2 sdt gula
1 sdm saus tiram 1 sdt saus ikan
1/2 sdt tepung jagung  


Bumbu:
 
Saus bumbu 1 sdm minyak wijen
1 sdm saus ikan 1 sdm bawang daun


Cara Memasak:
 
1. Yam Bean dan Wortel potong cincang, berendam fungus hingga halus, potong cincang parsley, potong panjang kertas padi selama 15cm X 15cm
2. Panaskan 1 sdm minyak, masak cincang daging babi, campuran yam bean, wortel dan fungus, masak selama 2 menit, dan masukkan bumbu-bumbu dan parsley, aduk rata dan masuk selama hingga masak dan sejuk
3. Membungkus mengisi ke dalam kertas padi hingga ukuran segi empat, menghapus uap piring, uap selama 4 menit.
4. Panaskan minyak wijen, campuran bawang daun dan saus ikan, mengalir di atas kukus berguling. Disajikan dengan sedikit saus ikan.
