竹笙素卷 - Braised Bamboo Pith Rolls
 
材料:
 
6條竹笙  


調味料:
 
少許糖 少許鹽
少許麻油  


醃料:
 
餡料: 40g 髮菜
1/3粒草菇丁粒 1/3粒蘑菇丁粒
1/3粒甘筍丁粒 1/2朵雪耳


做法:
 
1. 將竹笙浸軟,剪去頭尾及剪至長度,飛水撈起,備用
2. 將髮菜飛水洗淨,切碎;雪耳浸軟後飛水,切碎
3. 燒熱少許油,將餡料炒勻成餡料及加調味料拌勻
4. 將餡料釀入竹笙筒內,排上碟大火隔水蒸5分鐘,取起

Seasoning:
 
Some Sugar Some salt
Some sesame oil  


Marinade:
 
Stuffing: 40g sea moss
1/3 cup chopped straw mushroom 1/3 cup chopped carrot
1/3 cup chopped button mushroom 1/2 pc dried black fungus


Cooking Method:
 
1. Soak the bamboo shoot and cut both ends. Trim all bamboo shoot into size length. Poach in water. Drain and set aside.
2. Soak black moss and black fungus, snow fungus and scald ingredients, rinse cut into crushed.
3. Heat some oil to sauté the stuffing with seasonings.
4. Stuff the stuffing into the bamboo piths. Place on dish and steam for 5 minutes.

Panimpla:
 
Kaunting asukal kaunting asin
Kaunting sesame oil  


Pambabad:
 
Palaman: 40 gramo itim na moss
1/3 tasa ginayat na button kabute 1/3 tasa ginayat na karrot
1/3 tasa ginayat na straw kabute 1/2 piraso tuyong itim na fungus


Paraan ng pagluluto:
 
1. Ibabad ang bamboo pith at saka putulin ang magkabilang pulo. Hiwain ang labong sa pahabang sukat.
2. Ibabad ang itim na moss itim na fungus at snow fungus at banilan at patikikin.
3. Initin ang kaunting mantika at igisa ang mga pang palaman kasama ang panimpla.
4. Ipalaman ang palaman sa loob ng bamboo piths. IIagay sa plato at pasingawan ng 5 minutos.


Bahan:
 
6 batang bamboo pith  


Bumbu-Bumbu:
 
Gula secukupnya Garam secukupnya
Minyak wijen secukupnya  


Bumbu:
 
Isi: 40 gr sayur rambut (breat Basah)
1/3 gls jamur jerami (potong kotak kecil) 1/3 gls jamur kancing (potong kotak kecil)
1/3 gls wortel (potong kotak kecil) 1/2 tangkai jamur salju kering (syuet yi)


Cara Memasak:
 
1. Rendam bamboo pith dan potong kedua ujungnya. Potong bamboo poth dalam ukuran panjang. Rebus dalam air. Tiriskan dan sisihkan.
2. Rendam sayur rembut, jamur kayu kering dan jamur saiju, kemudian rebus sebentar bahan diatas, cuci dan potong kasar.
3. Panaskan sedikit minyak untuk menumis isi dengan bumbu-bumbu.
4. Isikan bahan (2) kedalam bamboo pith. Letakkan diatas piring dan kukus delama 5 menit.
