青瓜炒鮮魷 - Cucumber with Squid
 

材料

1 條青瓜               450 克鮮魷

數片甘荀               1 茶匙薑茸

1 茶匙蒜茸

 

醃料

1/2茶匙鹽              1茶匙糖

1茶匙生粉             少許胡椒粉

 

芡汁料

1茶匙生粉                1/2茶匙糖

1/2茶匙鹽                 4茶匙水

 

做法

1.  青瓜去頭尾﹐去皮切片﹐加鹽1/2茶匙稍醃料片刻﹐沖水﹐瀝乾

2.  鮮魷去衣和內臟﹐洗淨剞花﹐加入醃料醃5分鐘﹐ 飛水過冷

3.  熱鍋下油爆香蒜茸和薑茸﹐ 加入青瓜﹐ 甘荀和鮮魷﹐ 埋入芡汁料﹐即成。


Cucumber with Squid

 

Ingredients

1 pc of cucumber     450 g of squid

some carrot slices     1 tsp of ginger mash

1 tsp of garlic mash

 

Marinade Ingredients

1/2 tsp of Salt            1 tsp of sugar

1 tsp of flour              dash of pepper

 

Sauce Ingredients

1 tsp of flour              1/2 tsp of sugar

1/2 tsp of salt            2 tsp of water

 

Cooking Method:

1.       Peel cucumber and add in 1/2 tsp of salt, rinse and drain

2.       Wash squid and cut slice, marinade for 5 minutes and poach

3.       Heat Pan, add oil, pan-fry garlic and ginger, add in cucumber, carrots and squid. Season with seasonings,. Serve.


Ginisang Pipino at Pusit

 

Mga Sangkap:

1 pirasong pipino               450 gramong pusit

kaunting karot                    1 kutsaritang tinadtad na luya

1 kutsaritang tinadtad na sibuyas

 

Pambabad:

1/2 kutsaritang asin            1 kutsaritang asukal

1 kutsaritang arina              kaunting paminta

 

Panimpla:

1 kutsaritang arina              1/2 kutsaritang asukal

1/2 kutsaritang asin            2 kutsaritang tubig

 

Paraan ng Pagluluto

1.       Balatan ang pipino at lagyan ng 1/2 kutsaritang asin, hugasan at patiktikin.

2.       Hugasan ang pusit at ibabad ng 5 minuto at pakuluin sa mainit na tubig hanggang maluto.

3.       Mag-init ng kaunting mantika, igisa ang luya at sibuyas, ihalo ang pipino, karot at pusit. Ihalo ang panimpla at Ihanda.


Tumis mentimun Dengan Cumi-Cumi

 

Bahan:

1 bh mentimun                 450g cumi-cumi

irisan wortel secukupnya     1 sdt jahe cincang

1 sdt bawang putih cicang

 

Bumbu Marinet

1/2 sdt garam                   1 sdt gula

1 sdt tepung jaung            lada secukupnya

 

Pengental:

1 sdt tepung jagung          1/2 sdt gula

1/2 sdt garam                    2 sdt air

 

Cara Memasak:

1.       Kupas mentimun, potong tebal dan taburi garam sesaat, cuci bersih.

2.       Bersihkan tinta dan buang kotoran cumi-cumi kerat cumi-cumi pola menyerong dan potong-potong, taruh bumbu selama 5 menit, rebus sebentar dan cuci dng air dingin, untuk persediaan.

3.       Panaskan wajan tumis bawang dan jahe, Sampai harum lalu masukkan mentimun, wortel, dan cumi-cumi kentalkan dng saos pengental dan hidangkan di piring.
